Mixed Berry Cobbler


My favorite part of pie is the filling. Cobbler is a personal favorite for the simple fact that there's more filling and less crust. Win - win!

You can make this with an berry or any mix or berries. I used frozen but fresh works too. Just use your imagination.

This recipe is a favorite in our house. It's super easy and so yummy :)





Mixed Berry Cobbler

Filling:
400g (3 cups) berries, fresh or frozen (if frozen, take out of freezer to thaw about 10-15 min before you start)
3 tbsp sugar
0.8 dl (1/3 cup) orange juice

Crust:
1.6 dl (2/3 cup) flour
1/4 tsp baking powder
1 pinch salt
115g (1/2 cup) butter, softened
1.2 dl (1/2 cup) sugar
1 egg
1/2 tsp vanilla extract

1. Preheat oven to 190C (375F).
2. In a medium baking dish, mix berries, 3 tbsp sugar and orange juice and set aside.
3. In a medium bowl or food processor, cream together softened butter and 1.2 dl (1/2 cup) sugar. If you forgot to take the butter out of the fridge to soften, put it in the microwave on high for 10-20 seconds.
4. Beat in egg and vanilla extract.
5. Gradually add flour, salt and baking powder, stirring until just combined.
6. Drop spoonfuls of crust mixture on top of the berries. Try to cover as much of the berries as possible.


7. Bake for 35-40 min or until filling bubbles and crust is golden brown.
8. Serve alone or with ice cream.
